This mustard is a retranscription of the mustum ardent (Mustum ardens). The mustard seed, formerly known as mustard seed, was very bitter and difficult to sweeten.
The Romans made great use of honey, sometimes to excess, and used it to sweeten the condiment. As a result, this mustard is unusual in that it contains 40% honey.
This traditional mustard is the result of a collaboration with Ghislain Durant, a master mustard-maker in Castelnaudary, who revived this activity after 250 years of dormancy. A mustard seed harvested just outside Narbonne, salt from the Gruissan salt marshes, our garrigue honey and a granite stone mill are the ingredients that go into making this unique mustard!
